- 2 cups water
- 1 large ripe banana (sliced)
- 1/4 cup walnuts (chopped)
- 2 tbsp brown sugar
- 1 tbsp butter
- 1/2 tsp cinnamon
- 1/2 tsp vanilla extract

COOK THE OATMEAL: Bring the 2 cups of water to a boil in a medium saucepan over high heat. Once boiling, stir in the gluten-free rolled oats. Reduce heat to medium-low and simmer for 4-5 minutes, stirring occasionally, until the oats have absorbed most of the water and reached your desired consistency. The oatmeal should be creamy but not runny.

CARAMELIZE THE BANANAS: While the oatmeal cooks, melt the butter in a small skillet over medium heat. Once the butter is melted and foamy, add the banana slices in a single layer. Sprinkle the brown sugar evenly over the bananas. Don't stir immediately - let the bananas cook undisturbed for about 1 minute.

FINISH THE BANANAS: Carefully flip each banana slice and cook for another 1-2 minutes. The bananas are ready when they're golden brown on both sides with a caramel sauce forming in the pan. The sugar should be bubbling and the bananas slightly softened but not mushy. Remove from heat.

SEASON THE OATMEAL: Remove the oatmeal from heat and stir in the vanilla extract and cinnamon until evenly distributed. The residual heat will release the aroma of the spices.

ASSEMBLE AND SERVE: Divide the oatmeal between two bowls. Top each bowl with the caramelized bananas, spooning any caramel sauce from the pan over top. Scatter the chopped walnuts over everything. Serve immediately while hot.
