- 1 cup gluten-free rolled oats
- 2 cups almond milk
- 1 cup mixed berries
- 2 tbsp honey
- 1 tbsp chia seeds
- 2 tbsp sliced almonds
- 1/4 tsp cinnamon

HEAT THE MILK: Pour the almond milk into a medium saucepan and bring to a boil over medium-high heat. Watch it carefully as almond milk can boil over quickly. You'll see small bubbles forming around the edges first, then it will come to a rolling boil.

COOK THE OATS: Once boiling, reduce heat to medium-low and stir in the gluten-free rolled oats and cinnamon. Simmer for 4-5 minutes, stirring occasionally to prevent sticking to the bottom. The oatmeal is ready when it has thickened to your desired consistency and the oats are tender but still have a slight bite. For creamier oatmeal, cook 1-2 minutes longer.

ASSEMBLE THE BOWLS: Remove from heat and divide the oatmeal between two serving bowls. Arrange the mixed berries on top - you can place them in a pile on one side for a beautiful presentation, or scatter them across the top. Sprinkle the sliced almonds and chia seeds over the berries.

FINISH AND SERVE: Drizzle honey in a zigzag pattern over each bowl. Serve immediately while warm. The oatmeal will thicken as it sits, so if making ahead, add a splash of milk when reheating.
