- 4 medium bananas (ripe but firm)
- 1 cup dark chocolate chips
- 1 tbsp coconut oil
- 1/4 cup chopped peanuts
- 1/4 cup shredded coconut
- 2 tbsp sprinkles (GF certified)

PREPARE THE BANANAS: Choose bananas that are ripe but still firm - not overripe or they'll fall apart. Peel each banana and cut in half crosswise (through the middle). Insert a popsicle stick or wooden skewer about halfway into the flat cut end of each banana half. The stick should feel secure.

FREEZE UNTIL SOLID: Line a baking sheet with parchment paper. Lay the banana halves on the parchment, not touching each other. Freeze for at least 2 hours or until completely solid. This step is essential - if the bananas aren't frozen solid, the warm chocolate will make them mushy.

MELT THE CHOCOLATE: In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until completely melted and smooth (usually 2-3 intervals). The coconut oil helps the chocolate stay smooth and creates a thinner coating that hardens quickly. Pour into a tall, narrow glass or jar for easier dipping.

DIP THE BANANAS: Working quickly (one at a time), remove a frozen banana from the freezer. Hold it by the stick and dip into the melted chocolate, tilting the glass to coat as much of the banana as possible. Lift out and let excess chocolate drip back into the glass for about 5 seconds - rotate the banana to get an even coating.

ADD TOPPINGS IMMEDIATELY: While the chocolate is still wet (you have about 10-15 seconds), sprinkle your desired toppings over the banana - chopped peanuts, shredded coconut, or sprinkles. Hold the banana over a plate to catch any falling toppings. The cold banana will start setting the chocolate right away, so work fast.

FREEZE TO SET: Place the dipped banana back on the parchment-lined tray. Once all bananas are dipped and topped, return the tray to the freezer for at least 10 minutes until the chocolate is completely hardened. Store in an airtight container or freezer bag for up to 2 weeks. Let sit 2-3 minutes before eating so the banana softens slightly.
