Homemade Fruit Leather

  • 4 cups strawberries (fresh or frozen)
  • 2 tbsp honey
  • 1 tbsp lemon juice

    PREHEAT OVEN: Set oven to 170°F (75°C) or the lowest setting your oven has. Line a rimmed baking sheet, about 18x13 inches, with a silicone baking mat or parchment paper.

    BLEND THE FRUIT: Add strawberries, honey, and lemon juice to a blender. Blend on high for 30-60 seconds until completely smooth with no chunks.

    STRAIN IF DESIRED: Optional step to remove seeds. Place a fine-mesh strainer over a bowl. Pour the puree through the strainer and use a rubber spatula to press and stir the mixture through, leaving the seeds behind.

    SPREAD THE PUREE: Pour the puree onto the center of the prepared baking sheet. Use an offset spatula or the back of a spoon to spread it into a rectangle about 1/8 inch (3mm) thick. It should be thin enough to see through slightly.

    DRY IN OVEN: Bake 6-8 hours. Check at 6 hours by touching the center - it should feel dry and slightly tacky but not wet. The leather is done when you can peel up an edge cleanly without it sticking or tearing.

    COOL AND STORE: Remove from oven and let cool completely, about 30 minutes. Peel the leather off the mat and place on parchment paper. Cut into 1-inch wide strips and roll each strip in parchment. Store in an airtight container at room temperature for up to 2 weeks.
