Ingredients
- 1 cup strawberries (quartered)
- 1 cup blueberries
- 1 cup grapes (halved)
- 2 medium kiwi (peeled and diced)
- 1 cup cantaloupe (cubed)
- 2 tbsp honey
- 2 tbsp lime juice
- 2 tbsp fresh mint (chopped)
Instructions
- 1
PREPARE THE FRUIT: In a large serving bowl, combine the quartered strawberries, blueberries, halved grapes, diced kiwi, and cubed cantaloupe. Use a rubber spatula to gently toss the fruits together. Be gentle to avoid crushing the softer fruits like kiwi and cantaloupe.
- 2
MAKE THE DRESSING: In a small bowl or measuring cup, whisk together the honey and fresh lime juice until the honey is completely dissolved and the mixture is smooth. Taste and adjust - add more honey if too tart, more lime if too sweet. Fresh lime juice is key here; bottled won't have the same bright, fresh flavor.
- 3
DRESS THE SALAD: Drizzle the honey-lime dressing over the fruit. Using a large spoon or rubber spatula, gently fold the dressing into the fruit, turning from the bottom to coat all pieces evenly. Be careful not to mash the fruit - you want each piece to stay intact.
- 4
GARNISH AND SERVE: Scatter the chopped fresh mint over the top of the salad. The mint adds a fresh, bright note that complements the sweet fruit and tangy dressing. Serve immediately, or refrigerate for up to 2 hours. The fruit will release juices as it sits, so it's best enjoyed fresh. Leftovers keep refrigerated for up to 1 day but will be softer.
