  • 1/2 lb ground pork
  • 2 large eggs
  • 1/2 cup gluten-free breadcrumbs
  • 1/2 cup parmesan cheese (grated)
  • 2 tbsp italian seasoning
  • 4 cloves garlic (minced)
  • 1 cup marinara sauce (gluten-free)
  • 1 cup mozzarella cheese (shredded)

    PREP: Preheat oven to 375°F. Line a rimmed baking sheet with foil or parchment for easy cleanup. Let the meat sit at room temperature for 15 minutes while you prepare the mixture.

    MIX THE MEATLOAF: In a large bowl, combine ground beef and ground pork. Add eggs, gluten-free breadcrumbs, grated parmesan, Italian seasoning, and minced garlic. Season with 1 tsp salt and 1/2 tsp pepper. Mix with your hands until just combined - don't overmix or the meatloaf will be tough. The mixture should hold together when squeezed.

    SHAPE THE LOAF: Transfer the meat mixture to the prepared baking sheet. Shape into a loaf about 9 inches long and 5 inches wide, with an even thickness throughout. A uniform shape ensures even cooking. Make a slight indentation down the center lengthwise - this prevents the top from cracking.

    BAKE: Place in the oven and bake for 45 minutes. The meatloaf should be starting to brown on the outside.

    ADD THE TOPPING: Remove from oven. Carefully drain any excess fat that has collected around the meatloaf. Spread marinara sauce evenly over the top, then cover with shredded mozzarella. Return to oven and bake 15 more minutes until the cheese is melted and bubbly with golden spots. Internal temperature should reach 160°F.

    REST AND SERVE: Let the meatloaf rest for 10 minutes before slicing - this allows the juices to redistribute and makes slicing easier. Use a sharp knife to cut into 1-inch thick slices. Serve with extra marinara on the side if desired.
