Ingredients
- 1 cup gluten-free rolled oats
- 1 cup coconut milk
- 1/2 cup Greek yogurt
- 1 cup fresh mango (diced)
- 1 tbsp lime juice
- 1 tsp lime zest
- 2 tbsp honey
- 2 tbsp shredded coconut (toasted)
- 2 tbsp macadamia nuts (chopped)

COMBINE BASE INGREDIENTS: In a mason jar or medium bowl, add the rolled oats, coconut milk, Greek yogurt, lime juice, lime zest, and honey. The combination of yogurt and coconut milk gives a creamy, tangy base with tropical flavor.

MIX THOROUGHLY: Stir vigorously with a fork or spoon for about 30 seconds until all ingredients are well combined and the honey is dissolved throughout. Make sure no oats are stuck to the bottom of the jar.

REFRIGERATE OVERNIGHT: Cover the jar with a lid or the bowl with plastic wrap. Refrigerate for at least 4 hours, but overnight (8-12 hours) is ideal. The oats will absorb the liquid and become soft and creamy. They'll thicken as they sit.

ADJUST CONSISTENCY: In the morning, give the oats a good stir. If they're too thick for your liking, add 1-2 tablespoons more coconut milk and stir until you reach your desired consistency. Taste and add a drizzle more honey if needed.

PREPARE TOPPINGS: Toast the shredded coconut in a dry skillet over medium heat for 2-3 minutes, stirring constantly, until golden brown. Transfer to a plate immediately (coconut burns quickly). Chop the macadamia nuts if not already chopped.

ASSEMBLE AND SERVE: Divide the oats between two bowls or eat directly from the jar. Top with cubes of fresh mango, the toasted coconut, and chopped macadamia nuts. Serve cold. The oats can be made up to 3 days ahead - add toppings just before eating.
