- 2 cups parmesan cheese (freshly grated)
- 1 tsp italian seasoning
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
- 1 tbsp fresh rosemary (minced, optional)

PREHEAT OVEN: Set oven to 400°F (200°C). Line baking sheets with parchment paper or silicone baking mats for easy release.

MIX SEASONINGS: In a bowl, mix parmesan cheese with Italian seasoning, garlic powder, pepper, and rosemary if using. Toss until evenly combined.

PORTION THE CHEESE: Drop level tablespoons of cheese mixture onto baking sheet, spacing at least 2 inches apart. They will spread significantly during baking.

FLATTEN INTO ROUNDS: Using the back of the spoon or your fingers, gently flatten each mound into a circle about 2 inches wide and 1/8 inch thick. They should be thin enough to almost see through.

BAKE UNTIL GOLDEN: Bake 5-7 minutes until edges are golden brown and cheese is bubbling in the center. Watch closely after 5 minutes - they can burn quickly.

COOL TO CRISP: Let cool completely on the baking sheet, about 10 minutes. The crisps will be soft when hot but become crunchy as they cool.

STORE: Carefully peel crisps from parchment. Store in an airtight container at room temperature for up to 5 days.
