Ingredients
- 1 lb american cheese (cubed)
- 3/4 cup half and half
- 10 oz diced tomatoes with chiles (drained)
- 1 small jalapeño (seeded, diced)
- 1/2 tsp cumin
- 1/4 tsp garlic powder

START MELTING CHEESE: Add cheese cubes and half and half to a medium pot. Set heat to low, around 2-3 on the dial.

MELT SLOWLY: Stir every 30 seconds with a rubber spatula or wooden spoon, scraping the bottom to prevent sticking. Continue for 5-7 minutes until cheese is completely melted and the mixture looks smooth and glossy with no lumps.

ADD SEASONINGS: Stir in the drained tomatoes with chiles, diced jalapeno, cumin, and garlic powder until evenly combined.

HEAT THROUGH: Continue cooking on low heat for 2-3 more minutes, stirring occasionally, until everything is heated through and steaming gently.

TRANSFER: Pour into a serving bowl. The dip will thicken slightly as it cools.

SERVE: Serve warm with tortilla chips. If the dip gets too thick, stir in 1-2 tablespoons of half and half to loosen it.
