- 1/2 cup fresh strawberries (sliced)
- 1/4 cup fresh blueberries
- 2 tbsp honey
- 1/2 tsp lemon zest

WHIP THE RICOTTA: In a medium bowl, combine the ricotta cheese and heavy cream. Using a hand mixer or stand mixer fitted with the whisk attachment, beat on medium-high speed for 2-3 minutes until the mixture is light, fluffy, and has increased in volume slightly. You can also whip vigorously by hand with a whisk for about 3-4 minutes. The finished texture should be smooth and airy, similar to lightly whipped cream but thicker.

ADD THE LEMON: Using a microplane or the fine holes of a box grater, zest the lemon directly over the whipped ricotta - zesting over the bowl captures the aromatic oils that spray out. Fold the zest gently into the ricotta with a rubber spatula until evenly distributed. The lemon brightens the rich cheese and adds a fresh, aromatic note.

ASSEMBLE THE BOWLS: Divide the whipped ricotta between two serving bowls, using a spoon to create a smooth mound with a slight well in the center. Arrange the sliced strawberries and blueberries on top of the ricotta, either scattered across or arranged in sections for a prettier presentation.

FINISH AND SERVE: Drizzle the honey generously over the berries and ricotta - it will pool beautifully in the crevices. Scatter the chopped pistachios on top for color and crunch. Serve immediately while the ricotta is still light and fluffy. This also makes an elegant light dessert.
