  • 3 medium potatoes (peeled, cubed)
  • 1/2 cup frozen peas
  • 1 small onion (finely diced)
  • 1 tsp garam masala
  • 1/2 tsp cumin
  • 1/4 tsp turmeric
  • 1 1/2 cups GF all-purpose flour
  • 4 tbsp butter (cold, cubed)
  • 1/3 cup water
  • 2 tbsp cilantro (chopped)

    COOK THE POTATOES: Place cubed potatoes in a pot, cover with cold water, and bring to a boil. Cook 12-15 minutes until a fork slides easily through. Drain well and mash roughly with a fork, leaving some small chunks.

    MAKE THE SPICED FILLING: Heat 1 tablespoon oil in a skillet over medium heat. Add diced onion and cook 5-6 minutes until soft and translucent. Add garam masala, cumin, and turmeric. Stir constantly for 1 minute until fragrant.

    COMBINE FILLING: Mix the spiced onion into the mashed potatoes. Stir in peas and cilantro. Season with salt to taste. Let the filling cool to room temperature, about 20 minutes, to prevent the dough from getting soggy.

    MAKE THE DOUGH: Add flour to a large bowl. Add cold butter cubes and use your fingertips to work the butter into the flour until the mixture looks like coarse breadcrumbs. Drizzle in water and mix until dough just comes together. Knead briefly until smooth, about 1 minute.

    ROLL THE DOUGH: Divide dough into 8 equal pieces. Roll each piece on a lightly floured surface into an oval about 6 inches long and 4 inches wide, roughly 1/8 inch thick.

    SHAPE THE SAMOSAS: Cut each oval in half crosswise to make 2 semi-circles. Take one semi-circle, wet the straight edge with water, and fold it in half to form a cone shape, pressing the wet edges to seal. Fill with about 2 tablespoons of potato filling.

    SEAL AND BAKE: Wet the inside edges of the cone opening. Pinch the edges together firmly to seal, pressing out any air pockets. Place samosas on a parchment-lined baking sheet. Bake at 400°F (200°C) for 25-30 minutes until golden brown and crispy. Let cool 5 minutes before serving.
