
Crispy Baked Sweet Potato Fries

- 2 large sweet potatoes
- 2 tbsp olive oil
- 1 tbsp cornstarch
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp salt

PREHEAT PAN IN OVEN: Place a large rimmed baking sheet in the oven and preheat to 425°F (220°C). Preheating the pan helps the fries crisp up immediately when they hit the hot surface.

CUT THE FRIES: Peel the sweet potatoes. Cut them into matchstick shapes about 1/4 inch (6mm) thick. First slice into 1/4 inch rounds, then stack a few rounds and cut into 1/4 inch strips. Keep pieces uniform so they cook evenly.

COAT WITH SEASONINGS: Place the cut fries in a large bowl. Add olive oil, cornstarch, smoked paprika, garlic powder, and salt. Toss well until all fries are evenly coated. The cornstarch helps them crisp.

SPREAD ON HOT PAN: Carefully remove the hot baking sheet from the oven using oven mitts. Quickly spread the fries in a single layer with space between them. Crowded fries steam instead of crisp.

BAKE AND FLIP: Bake 15 minutes. Remove pan and flip the fries using a spatula. Return to oven and bake another 10-15 minutes until fries are golden brown on the edges and crisp. The tips may get dark which adds flavor.

SERVE IMMEDIATELY: Season with additional salt if needed and serve immediately. Sweet potato fries are crispiest right out of the oven and will soften as they cool.
