  • 12 shells corn taco shells
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 2 cups shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup cheddar cheese (shredded)
  • 1/2 cup sour cream
  • 1 cup salsa (gluten-free)

    MAKE THE TACO SEASONING: In a small bowl, combine chili powder, cumin, paprika, garlic powder, onion powder, 1/2 tsp salt, and a pinch of pepper. Mix well and set aside. Making your own seasoning ensures it's gluten-free (many store-bought mixes contain hidden gluten).

    COOK THE BEEF: Heat a large skillet over medium-high heat. Add the ground beef and cook 6-8 minutes, breaking it into small crumbles with a wooden spoon or spatula as it cooks. Continue until no pink remains and the meat is starting to brown. Don't stir constantly - letting it sit briefly develops better flavor.

    DRAIN AND SEASON: Carefully drain excess fat from the pan (tilt the pan and spoon it out, or drain into a can - never down the drain!). Return to heat. Add the taco seasoning mixture and 1/2 cup water. Stir well to coat all the meat.

    SIMMER THE MEAT: Let the seasoned beef simmer for 5-7 minutes, stirring occasionally, until the liquid has reduced and the mixture is thick and saucy but not dry. The sauce should cling to the meat. Taste and adjust salt if needed.

    WARM THE TACO SHELLS: While the beef simmers, heat taco shells according to package directions. For crispier shells, you can bake them in a 375°F oven for 3-4 minutes or warm them directly over a gas burner for a few seconds per side.

    SET UP THE TACO BAR: Arrange all toppings in separate bowls: shredded lettuce, diced tomatoes, shredded cheddar cheese, sour cream, and GF salsa. Transfer the taco meat to a serving bowl. Let everyone build their own tacos - start with meat, then layer toppings as desired. Two tacos per person is usually a good serving.
