
Turkey Club Lettuce Wraps

- 1 head butter lettuce
- 8 oz deli turkey (gluten-free)
- 8 slices bacon (cooked crisp)
- 1 large tomato (sliced)
- 1 medium avocado (sliced)
- 3 tbsp mayonnaise
- 1 tbsp dijon mustard
- 4 slices swiss cheese

PREPARE THE LETTUCE: Carefully separate the butter lettuce leaves from the head, keeping them as intact as possible - you want them to serve as wraps. Rinse gently under cool water and pat completely dry with paper towels or spin in a salad spinner. Wet lettuce won't hold the fillings well. Select 8-12 of the largest, most cup-shaped leaves.

MAKE THE SAUCE: In a small bowl, mix together the mayonnaise and Dijon mustard until well combined. Add a pinch of black pepper if desired. This classic club sauce adds richness and tang.

PREP THE FILLINGS: Slice the tomato into thin rounds, then cut each round in half. Slice the avocado. Have the cooked bacon, deli turkey, and Swiss cheese ready. If bacon isn't already cooked, cook until crispy and drain on paper towels.

ASSEMBLE THE WRAPS: Lay out the lettuce leaves. Spread about 1 teaspoon of the mayo-mustard mixture on each leaf. Layer the fillings: start with 1-2 slices of turkey, then half a slice of Swiss cheese, 1 strip of bacon (broken in half to fit), a tomato slice, and 2-3 slices of avocado. Don't overfill or the wraps will be hard to roll.

ROLL THE WRAPS: Fold the sides of each lettuce leaf inward slightly, then roll from the bottom up, tucking the fillings as you go. The wrap should be snug but not so tight that it tears the lettuce. Secure with a toothpick through the center if the wraps don't stay closed.

SERVE: Arrange the wraps on a platter or divide among plates. Serve immediately while the bacon is still slightly warm and the lettuce is crisp. Provide the remaining mayo-mustard sauce on the side for dipping.
