    MAKE THE DRESSING: In a small bowl, whisk together mayonnaise and honey until smooth. Taste and adjust - it should be creamy with a subtle sweetness. Add a pinch of salt if desired. For a lighter version, use half Greek yogurt and half mayo.

    COMBINE THE SALAD: Add the sliced celery, halved grapes, and chopped walnuts to the bowl with the apples. The celery adds crunch, grapes add sweetness, and walnuts add richness - each component is essential to the classic flavor.
