Ingredients
- 2 cups greek yogurt
- 1 cup mixed berries
- 1/2 cup GF granola
- 2 tbsp honey
- 1 tbsp chia seeds
Instructions
- 1
PREPARE YOUR GLASSES: Choose 2 clear glasses, jars, or parfait cups (about 12 oz each) so you can see the pretty layers. Have all your ingredients measured and ready - this comes together quickly.
- 2
ADD FIRST YOGURT LAYER: Spoon half the Greek yogurt (about 1/2 cup) into each glass, dividing evenly. Use the back of the spoon to spread it into an even layer against the sides of the glass for a clean look.
- 3
ADD FIRST BERRY LAYER: Add half of the mixed berries on top of the yogurt in each glass. Gently press them down slightly so they nestle into the yogurt. Reserve the prettiest berries for the top.
- 4
DRIZZLE WITH HONEY: Drizzle about 1/2 tablespoon of honey over the berries in each glass. The honey adds sweetness and also helps the layers stick together.
- 5
REPEAT THE LAYERS: Add another layer of yogurt (remaining 1/2 cup per glass), followed by the remaining berries. Drizzle with the rest of the honey.
- 6
ADD CRUNCHY TOPPINGS: Just before serving, top each parfait with granola (about 1/4 cup per glass) and sprinkle with chia seeds. Adding the granola last ensures it stays crispy - if added too early, it will get soggy from the yogurt and fruit juices.
- 7
SERVE IMMEDIATELY: Eat right away while the granola is still crunchy. If you need to make these ahead, assemble without the granola and refrigerate for up to 8 hours. Add the granola just before eating.
